After working in fine Parisian gastronomy, Lucie Lesgourgues confronted food waste in the fish industry at Rungis. Inspired by Iberian expertise, she founded Pirate Cannerie to elevate traditional preservation, creating modern recipes from responsible, short-circuit local catches.

Rooted in sustainable fishing and zero shortcut craft, this modern cannery focuses entirely on seasonal French catches to eliminate industrial waste. Everything is prepared by hand in infinitely recyclable tins, while proudly fostering social inclusion by collaborating with an ESAT to employ people with disabilities.
